About Varmland
The stuga itself was exactly what I needed. Red wooden walls, a proper kitchen with a stove that looked older than me, and a porch where I could sit and nurse my wounded pride with a cup of coffee. I had big plans for self-catering. Big, ambitious plans that did not involve scrambled eggs on the gravel. The next morning, I walked into Saffle proper to find the local market. It turned out to be more of a modest affair than the bustling food halls I had imagined, but the man selling potatoes from the back of his van made up for it in charm. He asked me something in rapid Swedish, I panicked and said "tack" approximately seven times, and left with five kilos of potatoes because I had failed to indicate when to stop. That evening, I attempted my first proper meal: a simple hash with the potatoes, some locally smoked pork I had found at the ICA supermarket, and onions that made me weep actual tears at the kitchen table. It was not elegant. It was, however, absolutely delicious in that way that food always tastes better when you have worked for it and eaten it in complete silence on a porch overlooking pine trees. I became slightly obsessed with the local food shops. There was a small deli near the harbour where I bought pickled herring, which I told myself I would appreciate like a true Swede. I opened the jar on the third evening, after two glasses of surprisingly affordable box wine. The experience was... educational. I respect the tradition. I respect it from a distance now, with the jar firmly sealed and positioned at the back of the fridge where I do not have to make eye contact with it. My greatest triumph came on the fourth day. I found fresh chanterelles at a roadside stall, left there on the honour system with a tin for money. I felt incredibly virtuous paying for them, like I had passed some Swedish citizenship test. That night, I made a cream sauce that I spooned over pan-fried fish from the lake. I sat on that same porch, watching the light fade, and felt genuinely proud of myself. This was why I had come. Not for perfection, but for the quiet satisfaction of feeding myself in a place where the nearest restaurant was a drive away and the nearest person who cared about my culinary failures was several countries distant. By the end of the week, my kitchen confidence had grown in direct proportion to my waistline. I had mastered the art of the Swedish pancake, though my first attempt had resembled something you might find on the bottom of a shoe. I had discovered that lingonberry jam improves almost everything, including my mood. I had even made peace with the herring, in the sense that I no longer flinched when opening the fridge door. On my final morning, I cooked the last of the potatoes, fried an egg without dropping it, and ate slowly on the porch. The tomato from day one was still missing somewhere in the garden, probably feeding a family of field mice who had enjoyed a more successful holiday than I had. I did not mind. Some meals are meant to be lost, and some are meant to be remembered, and that breakfast, simple and imperfect, was one I knew I would carry home with me. |
