The drive to Sint Annaland was going brilliantly until I realised I had packed everything except my own brain. There I was, smug as you like, having remembered chargers, wellies, and a board game nobody would play, only to discover at a petrol station somewhere past Antwerp that my wallet was sitting on the kitchen table in Birmingham. My partner's face went through several stages of grief in about four seconds. We survived on his emergency twenty euro note and the sheer power of embarrassment.

By the time we rolled into Zeeland, crossing those extraordinary Delta Works bridges with the grey-green water stretching everywhere, I had mostly forgiven myself. The village of Sint Annaland announced itself with a church tower, neat brick houses, and that particular hush you only get in proper Dutch countryside. Our holiday home sat on a quiet street, all tidy gabled roof and welcoming windows, and I immediately felt that lovely shift from travelling to having arrived.

The kitchen, as it turned out, would become the true heart of our stay. I pushed open the door and found myself actually laughing with relief. Proper cooker, decent knives, a fridge that promised to hold more than just disappointment. After my financial catastrophe, self-catering was not merely a preference but a necessity. I unpacked our bags with the enthusiasm of someone who had just discovered a lifeboat.

That first evening, we walked to the local supermarket, which sounds mundane but absolutely was not. The Dutch do ordinary food shops with such competence it feels like theatre. I wandered aisles of perfect vegetables, cheeses I could not pronounce, and bread that actually looked like bread rather than foam packaging. We bought stroopwafels for immediate consumption, some decent beer, and ingredients for a simple pasta that I managed not to ruin. Small victories.

Morning brought the market in Sint Annaland itself, set up near the harbour with that particular bustle of locals who know exactly what they want. I bought fresh fish still smelling of the Oosterschelde, mussels in their black shells, and vegetables so recently harvested they still had personality. An elderly woman explained in excellent English how to cook the mussels properly, though I suspect she saw my general aura of culinary anxiety and took pity. I listened with the intensity of someone receiving state secrets.

Back at the house, I attempted my first proper Dutch meal. The mussels steamed in white wine with shallots, which sounds sophisticated until you learn I set off the smoke alarm twice and had to fling windows open in February. My partner sat at the kitchen table, wrapped in a blanket, watching me flap a tea towel at the ceiling while muttering apologies to the neighbours. The mussels were genuinely delicious though. We ate them with frites from a nearby takeaway, because even my newfound ambition has limits, and dipped everything in mayonnaise like proper locals.

Breakfasts became a ritual I genuinely miss. Thick slices of bread from the bakery we found, proper butter, hagelslag that I initially bought as a joke but became genuinely addicted to. I would stand at the kitchen window in my dressing gown, watching the village wake up, eating chocolate sprinkles on toast and feeling absolutely no shame about it whatsoever.

I tried to recreate a proper Zeeland fish stew on our third day, using local cod and some smoked eel I bought on optimistic impulse. The result was edible, which I consider a triumph, though my partner described it as "interesting" in that specific tone that means "please never make this again." We laughed about it over wine, sitting at that kitchen table while the evening went dark outside, and I felt that particular contentment of being somewhere that suits you.

The local chip shop became our guilty backup, the place we wandered to when my cooking experiments went too far. I grew embarrassingly fond of their kroketten, those deep-fried cylinders of meaty mystery that taste like comfort itself. We would eat them on a bench near the water, watching boats come in, not talking much, just being full and present and glad to be there.

By the end of the week, my wallet had been couriered from home by a merciful friend, but something had shifted. That kitchen in Sint Annaland, with its ordinary utensils and its view of ordinary Dutch life, had taught me something I had not expected. I am not a natural cook, not remotely, but there is profound pleasure in feeding yourself from a place, learning its rhythms through its food, failing and trying again. We left with fuller bodies and, I think, slightly fuller hearts, carrying home a bag of stroopwafels and the memory of smoke alarms, good fish, and better mornings.
