About Dalmatia
I should have known the holiday was going to be eventful when I managed to get my hire car stuck between two olive trees on a driveway barely wider than a bicycle path. There I was, wedged in like a cork in a wine bottle, wondering how I was going to explain this to the nice people at the rental desk in Zadar. A local chap wandered over from his garden, took one look at my predicament, and simply shook his head and laughed. Ten minutes of careful reversing later, I finally rolled up to the stone house in Pasman Zdrelac with my dignity in tatters and a sudden craving for something strong.

The place itself was an absolute gem. Terracotta roof, wooden shutters, that particular sun-bleached look that only proper Dalmatian stone acquires after decades of baking in the Adriatic heat. I dumped my bags and headed straight for the kitchen, partly to inspect the damage to my nerves and partly because I had grand plans. I'd brought a cookbook. I was going to cook like a local.

My first morning, I marched down to the little harbour market with the confidence of someone who absolutely could not tell the difference between a squid and a cuttlefish. The fishmonger, a woman with hands like weathered leather and an expression that suggested she'd seen my type before, held up various silvery creatures while I nodded enthusiastically and pretended to understand. I came away with a bag of sardines, some octopus that I was assured was "very easy," and a whole sea bream that stared at me with what I can only describe as accusatory eyes.

Back at the house, I discovered that "very easy" octopus requires either a hammer or approximately four hours of gentle simmering. I had neither the patience nor the hammer. After twenty minutes of prodding something with the texture of a rubber tyre, I admitted defeat and wandered down to Konoba Porat, one of the local eateries tucked along the waterfront. The grilled fish there was embarrassingly good. Tender, smoky, served with nothing more than olive oil, lemon, and some potatoes roasted with rosemary. I ate in silence, contemplating my failures, and ordered another glass of local white.

The pub situation in Zdrelac is not exactly bustling, which is rather the point. There's a quiet bar near the little bridge connecting to Ugljan island where the barman pours generous measures of rakija and seems genuinely surprised when tourists appear. I became a regular over my fortnight, mostly because I kept attempting to cook and kept requiring consolation. The first time I tried making peka, that traditional Dalmatian method of slow-cooking meat under a domed lid covered in embers, I managed to create something that tasted vaguely of burnt offerings and regret. The neighbours' cat took one sniff and walked away with its tail high, which I felt was unnecessarily judgmental.

By day four I had established a routine. Morning coffee on the terrace, watching the fishing boats putter out. Then a stroll to the small market for whatever looked least likely to defeat me. I became competent at prstaci, those long thin shellfish that locals prize, simply because boiling them requires no skill whatsoever. Dip in garlic butter, try not to think about what they look like before cooking. Tremendous.

I did eventually master the art of the simple grill. Fresh fish, olive oil, sea salt, lemon. That is the Dalmatian secret, I realised. Not elaborate technique but absolutely pristine ingredients and the good sense not to interfere with them. My final evening, I produced a respectable branzino with blistered cherry tomatoes and some bread I'd fetched from the bakery in the early morning. Ate it on the terrace with a bottle of Posip, watching the sun drop behind the islands, feeling rather pleased with myself.

The cat wandered past, gave my plate a look, and actually paused. I'll take that as a review.
